Baked spinach and mushroom quesadillas.
Ingredients: 2 cups fresh spinach. 1 cup, sliced mushrooms 1 cup shredded cheese (either cheddar or mozzarella). Four large flour tortillas. 1 tablespoon olive oil. ½ teaspoon garlic powder. ½ teaspoon salt. ½ teaspoon black pepper Instructions: Preheat the oven to 375° Fahrenheit (190° Celsius).In a medium-sized pan, heat the olive oil. Cook until the mushrooms are softened, about 3-4 minutes. Stir in the spinach, garlic powder, salt, and pepper. Cook until the spinach wilts. Place the tortillas on a baking sheet. Spread the spinach-mushroom mixture on half of each tortilla. Sprinkle the cheese on top. Fold the tortillas in half and press lightly. Bake for 10–12 minutes, flipping once, until golden and crispy.
