Add 1 cup of corn kernels, 1 cup of shredded cheddar cheese, 1/4 cup of chopped green onions, 1/4 cup of flour, 1 egg, salt, and pepper to 2 cups of cooked potatoes that have been grated. Mix thoroughly. In a skillet, heat the oil over medium heat. Flatten a little by scooping spoonfuls of the mixture into the pan. Cook until brown and crispy, 3 to 4 minutes per side. Use paper towels to drain. Serve hot with your preferred dip or sour cream. These fritters are loaded with cheesy, savory taste and have a crunchy outside and a soft interior.
