Recipe for Pastina Soup (Italian Penicillin Soup)


 

Often referred to as "Italian penicillin," pasta soup is a hearty dish that is ideal for warming up on colder days or curing colds.

This easy recipe makes a soul-soothing dinner by combining small noodles with a delicious chicken broth. 

Bring 4 cups of chicken broth to a medium boil to get started. Cook 1 cup of pastina (small star-shaped pasta) for 5 to 7 minutes, or until it is soft. 

Combine two tablespoons of grated Parmesan cheese and one egg in a small bowl. 

Gently whisk the egg mixture to form ribbons as you slowly pour it into the cooking soup. 

Add a dash of fresh parsley and season with salt and pepper. 

Top with more Parmesan and serve hot. All ages like this comforting soup, which can be prepared in just a few minutes!
